Stevia is an herb in the compositae family that grows as a small shrub in parts of Paraguay and Brazil. The glycosides in its leaves make it incredibly sweet, a property that is unique among the nearly 300 species of stevia plants. The Introduction of Stevia Extract
It is a strain that has a high, yet exceptionally stable, level of Rebaudioside A and a low level of Stevioside. Stevioside is the sweetfactor in the Stevia plant that has the aftertaste. Exacting measures are taken to preserve these levels in each successive plant generation. Properly growing, nourishing, and maintaining a quality plant is critical to the entire process.
Rebaudioside A has the least bitterness of all the steviol glycosides in the stevia plant. To produce rebaudioside A commercially, stevia plants are dried and subjected to a water extraction process. This crude extract contains about 50% rebaudioside A; its various glycoside molecules are separated via crystallization techniques, typically using ethanol or methanol as solvent. This allows the manufacturer to isolate pure rebaudioside A.
