Beta cyclodextrin is a kind of white crystalline powder which is produced by the reaction of glucosyltransferase with starch. Its ring structure is constructed by 7 dextroses via the function of α-1.4 bonds. There is a cavity in its molecule. The outer side of cavity keeps strong hydrophilic characteristics; the inner side of cavity keeps hydrophobic characteristics. It can wrap many kinds of guest molecules into its internal, particularly to entrap oil form substance,then form inclusion complexes. Beta cyclodextrin is widely used in foods, cosmetic and pharmaceutical industries as stabilizer, emulsifier, flavoring agent and aseptic.
