Dong Ding Oolong
Dong Ding Oolong is one of the most well-known of the Taiwan Oolong, and is produced in the Nantou region of Taiwan. The green leaves are tightly rolled and produce a yellowish green tea. The scent is captivatingly sweet and fruity. It has a smooth, refreshing.
BREWING AND SEVERING
Steeping is the process of making a cup of tea. It is also refer as brewing. Generally, 3 grams of tea per 200 ml of water or about two teaspoons of Oolong tea per cup should be used. Oolong tea should be prepared with 95-100°C and steeped 45 second. Unlike other tea, it improves with rebrewing. It is common to brew the same leaves 5-6 times, the 3rd - 4th steeping usually being considered the best.
