I love sweet corn. For a long time, however, I felt that sweet corn was inferior to field corn. Now listen, I was a pretty young kid at the time, and coming from a grandmother who insisted on using every part of everything, I learned to make cornhusk dolls out of field corn husks. They’re excellent for this purpose. They’re also great for making tamales. When I was first introduced to the husk of sweet corn, I was less than impressed. They are soft, silky, and simply do not hold up to the rigors of dollmaking or tamale preparation.
However, it didn’t take me long to realize that eating an ear of sweet corn fresh from the field is like no other experience on earth. Picked at the peak of its sugar cycle, sweet corn is like eating candy, only it’s really a vegetable! Small wonder it’s one of the first veggies young kids ask for by name! Who can resist gnawing on an ear of yellow deliciousness?
