1 sugariness 
The sugariness of glucose solution is relative with solution concentration, The sugariness of lower concentration solution is lower than sucrose, and the difference will be decreased along with the advancing of concentration.
(1) Fermentation properties
Glucose can be fermented by yeast, and it is suitable to be used in fermented food.
(2) solubility
The equilibrium solubility for glucose is low, and its concentration is about 50% at room temperature. Under the condition of high concentration, glucose will be crystallized.
(3) The properties on absorption moisture and keeping moisture
Monohydrate α-glucose absorbs moisture when the relative humidity is above 60%, and absorbs moisture faster with improving humidity. As the moisture content reaches to 15-18%, crystal will be dissolved.
(4) Osmotic pressure
Glucose solution with higher concentration could inhibit the growth of many microorganisms; it is an important ways to preserve food in sugar. The viscosity of glucose is lower than sucrose.

Glucose is higher than sucrose at the depression degree of the freezing point.

(1) Application in food trade
