Lentinus edodes (shiitake) is a famous traditional Chinese mushroom, in the world it is the earliest mushroom which was cultivated by human being. Lentinus edodes (shiitake) has many nutritional elements and tastes good, so that it is named as king mushroom. Lentinus edodes (shiitake) is rich in nutrition. Those dried Lentinus edodes (shiitake) contain 18.64% protein, 4.8% fat, 71% carbohydrate, ore than 10 kinds of amino acids, including 7 kinds of essential amino acids. It also contains VD, VB1, VB2, VPP , mineral contents and crude fibre etc.

The carbohydrate in the shiitake mainly includes mannitolum, trechalose, mycose, glucose, fondaparinum etc.
