Rice is the most important and extensively grown food crop in the world. It is the staple food of more than 60 percent of the world population and will remain as lifeline for the people in Asia and Pacific regions where 90% of it is produced and consumed. India has the largest area under rice in the world and ranks second in the production after China. India has also emerged as a major rice consumer.

Rice belongs to the family Graminae and as such exhibits traits similar to all other cereals. Cultivated rice is of two types; African or Oriental. The most common is that of species Oryza sativa (Oriental) with the probable countries of origin being South China to East India. Records show it being grown in China as early as 2800 B.C.

Four major types of rice are produced worldwide:

• India accounts for more than 75% of global trade and is grown in tropical and subtropical regions.
• Indica rice cooks dry and separate.
• Japonica rice, typically grown in regions with coller climates, accounts for 12% of global rice trade.
• Aromatic rice, primarily jasmine from Thailand and Basmati from India and Pakistan, accounts for around 10% of global trade and sell at a premium in world markets.
• Glutinous rice, grown mostly in Southeast Asia and used in desserts and ceremonial dishes, accounts for most of the remainder.
