ECLAIR PLANT

Introduction:

Eclair is a special typeof candy having filling of chocolate paste.

Manufacturing Process:

Eclairmanufacturing is a simple process. First raw materials are mixed withthe help of Batch homogenizer. The mixed mass is cooked by vacuum batchcooker or continuous vacuum cooker. The cooked mass is collected onwater circulating cooling table for cooling. At this stage colour,flavour and other ingredients are added to the batch. The mass is thenpassed through rotary Kneading machine to ensure uniform distributionof ingredients in a hygienic way. Once candy mass is cooled and mixedproperly it is then transferred to the Batch former attached to a centerfiller machine so that the chocolate paste prepared separatelybeforehand, gets filled in the center portion of the candy mass. Thethick uniform center filled mass produced is fed into the rope sizer toform a uniform rope of the required size. This rope is then fed intothe candy forming machines where candies are formed in required shape,size and weight. The formed Candies are discharged on the coolingconveyor which cools them so that they may be wrapped andpacked further. The formed Eclairs after cooling are packed by packingmachinelike pillow pack, single twist or double twist machine.
