Brewing Process

Process of brewing


At first, we pour little water into the barley in order to make them fresh and wet, and then crush them with malt miller to get complete barley husks and grains.


We boil the water in the hot water tank to get the hot water for start. Next what we should do is to transfer part of hot water to the mash tun exactly, in which soak the grains we crushed sufficiently with agitator worked at specific temperatures such as 55℃, 65℃. After that, we will transfer some hot water boiling from hot water tank at first into the mash tun that has been emptied in order to wash grains.


In this step, the wort is separated from the macromolecular particles through the milled sieve plate to keep itself clear. After the transformation of first wort to kettle tank, we transfer hot water from hot liquor tank to the lauter pot to proceed with first grain washing and later go on the second time to obtain second grain washing. Finally, pull out the grains.

The wort that comes from kettle tank usually goes into the whirlpool tank from tangential whirlpool inlet by sanitary transfer pump, after which there will be a self-circulation in the whirlpool tank. After half an hour of whirlpool, the hot condensate collects into the middle of the slanting bottom. At the same time, the hops are separated from the wort with the hops back, and the remaining clear wort is cooled by the plate heat exchanger , and then oxygenated by the oxygenation filling device to enter the fermenter finally.

Wort cooling

After the whirlpool, the wort must be brought down to fermentation temperatures 20–26 °C (68–79 °F) before yeast is added. In modern breweries this is achieved through a plate heat exchanger.


In this step, we only need to add yeast and wait, however some kinds of beer need to add hops during the fermentation.
The maturity time varies with the type of beer, usually between 12 and 21 days.
