In India, it is cultivated along Western Ghats Maharashtra, Kerala, Karnataka and Tamil Nadu states besides foot-hills of Arunachal Pradesh and Sikkim. It was introduced in India about a century back and is now commercially cultivated in these States. Most of the species of lemon grass are native to South Asia, South-east Asia and Australia. The so called East Indian lemon grass & also known as Malabar or Cochin grass is native to India, Sri Lanka, Burma and Thailand.

Lemon grass is a tall, perennial sedge throwing up dense fasciclles of leaves from a short rhizome. The culm is stout, erect, up to 1.8 meter high. Leaves are long, glaucous, green, linear tapering upwards and along the margins; ligule very short; sheaths terete. It is a short day plant and produce profuse flowering in South India. The inflorescence is a long spike about one metre in length. Flowers borne on decompound spatheate, panicles 30 to over 60 cm long. At present, India grows this crop in 3,000 ha area, largely in states of Kerala, Tamil Nadu, Karnataka, U.P. and Assam and the annual production ranges between 300 to 350 t/annum.

Lemongrass is native to tropical countries of India, Combodia, Indonesia ,Sri Lanka and Malaysia.  It grows upright in dense bunches and thrives in moist, warm climate with well drained, losse, dry, loam soils. Lemongrass flowers grow in the winter season.

Lemongrass can be harvested 6 to 9 months after the slips are planted. Lemongrass is harvested in the morning on the dry day to allow the evaporation of dew and avoid loss of plants colour due to heat

After harvesting, the lemongrass has been allowed to wilt for 24 hours before the distillation as it reduces the moisture content by 30% and improve oil yields. The lemon crop is chopped into small pieces before filling in the stills.

Lemongrass oil is obtained by steam distillation process

Steam distillation is a separation process used to purify or isolate temperature sensitive materials, such as natural aromatic compounds. Steam or water is added to the distillation apparatus, lowering the boiling points of the compounds. The goal is to heat and separate the components at temperatures below their decomposition point.

Many organic compounds tend to decompose at high sustained temperatures. Separation by distillation at the normal boiling points is not an option, so water or steam is introduced into the distillation apparatus. The water vapor carries small amounts of the vaporized compounds to the condensation flask, where the condensed liquid phase separates, allowing easy collection. This process effectively enables distillation at lower temperatures, reducing the deterioration of the desired products. If the substances to be distilled are very sensitive to heat, steam distillation may be applied under reduced pressure, thereby reducing the operating temperature further.

After distillation the vapours are condensed. Usually the immediate product is a two-phase system of water and the organic distillate, allowing separation of the components by decantationpartitioning or other suitable methods.
